Sour Cream Rhubarb Pie

As promised!

Ingredients

1 9 inch pie shell (bought, or buy pastry and roll out or be really good and make your own.)

4 Cups of rhubarb cut in to 1 inch chunks

1 and a 1/2 cup of sugar

1/2 cup plain flour

1 cup sour cream

Topping

1/2 cup plain flour

1/2 cup brown sugar

1/4 cup butter/marg

Place the cut rhubarb in the pie shell

Stir the sugar and flour together, add the sour cream, stir till well combined. Pour over rhubarb.

Mix the topping ingredients together until like breadcrumbs and sprinkle over the top of the pie.

Place on bottom shelf of oven, 10 minutes at 220c then turn oven down to 180c bake for 40 minutes till fruit is cooked and topping is browned.

I have been running since 2004 when I decided to do the Race for Life, as a close friend was terminally ill with cancer. Following that I did a couple of 10km at Leeds castle and Sandringham. Then in 2005 ran my first London marathon, then another in 2007 in blistering temperatures. I have entered the London marathon every year since but have been rejected, am now find maintaining my fitness & motivation hard, so when the email came through about Janathon I thought why not! Am hoping this helps with fitness, motivation and weight loss!! Wish me luck!

    Pot? Kettle mean anything??? Ha ha ha..you are so bad!! O I love love love it and rhubrab!! Best go for a run first and then get some canned rhubarb as its not rhubarb season here yet…ooo i may even have some in the freezer:)

    I can vouch for this one – it is delicious – I’ve tried it with blueberries and any favourite fruit.
